Plantain and Haddock Patties

Got a quick little post for you guys!

So I was making dinner tonight and what started out as searing some left over haddock and baked plantain from the other day culminated in the creation of a yummy new hybrid. Plantain and haddock patties are delish!

Korean Bbq Chicken Wings With Spicy Suya Rub

How have I never made chicken on this blog?? Let’s fix that real quick…

For today’s post, I decided to play around with Korean BBQ wings. Now I’ve never attempted any Asian recipes before, nor have I ever tried to make chicken wings. Lucky for me, Google is my friend.

Street Feast, London

Yesterday my friends and I headed over to Street Feast in East London for a round of oohs and ahhs at this year’s selection of quirky street food vendors.

Everything from Mini-Naan sliders and pizza-burgers to hot wings and grilled mac-n-cheese sandwiches were on the menu at the Dalston Yard location, which will be open all summer long.

Shaki and Agege Bread Toasties

Let’s talk about tripe. Again.

So recently I learnt that there’s a whole world of people out there who refuse to eat tripe (or “shaki” as we call it in Nigeria). I mean, yeah – surprise, surprise. It’s stomach lining. Who the hell wants to eat stomach lining?

Plantain Croquettes

The very first time I tried croquettes was many moons ago during a Spanish study abroad program back in my college days.

Gloria, my “Señora” at the time (a name we gave to our homestay mothers), was the most adorable little Spanish lady who would serve up the most delightful little meals. I credit her for introducing me to the appetizing world of Spanish cuisine.

Matzo Ball Pepper Soup with Tripe (Shaki)

So I made a yummy bagel sandwich this morning, and it turned out so well I just had to share. I know, I know.

Tripe again. But hopefully the fact that I seem to always have tripe in my fridge these days will tell you something…(and this is obvs directed at all the tripe haters out there. Obvs.).

Lamb Chops, Two Ways: Brunch and Dinner

So I made a yummy bagel sandwich this morning, and it turned out so well I just had to share. I know, I know.

Grilled Pawpaw and Brussels Sprout Salad with Raspberry-pawpaw Vinaigrette

Pawpaw, a.k.a. papaya, is a fruit commonly eaten in tropical climates – like Nigeria. Though I was never a huge fan growing up – especially when there was always a ripe pineapple or mango nearby – every time I see one, I’m brought back to being a kid and playing under the hot Nigerian sun.

Now seeing as today marks the first official day of fall (and I was recently gifted a giant papaya that I’m yet to use), I’ve decided to relive the warmer days by playing around with pawpaw, but in a way that makes the transition into this cooler season a tad bit smoother.
